Job Description:
Assists in managing the Food Safety and Quality Assurance program to ensure
safe, high-quality products and compliance with company policies, USDA/FSIS
requirements, BRC standards, HACCP, GMPs, sanitation, labeling, microbiology, allergen
control, prerequisite programs, customer requirements, and applicable federal and state
regulations. Serves as a plant liaison with FSIS and supports the development,
implementation, review, verification, documentation, document control, and record
retention of food safety and quality systems. Provides leadership, support, and direction to
Quality Assurance Supervisors, BRC Assistant, Quality Assurance Night Shift, QA Supervisor
and BRC Assistant for the Laboratory, Quality Assurance Technicians, and related food
safety staff. Quality Assurance Supervisors serve as backups when the Food Safety & Quality
Assurance Assistant Manager is unavailable
Essential Duties and Responsibilities include the following. Other duties may be assigned.
• Serve as the designated liaison between the plant and FSIS; keep current with
USDA/FSIS regulations and ensure compliance with requirements related to plant
conditions, Sanitation Standard Operating Procedures, HACCP, GMPs, labeling,
microbiology, allergen control, and prerequisite programs.
• Assist in writing, implementing, verifying, and maintaining food safety and quality
procedures and programs to produce safe food with acceptable quality attributes,
including documentation, document control, and record retention.
• Oversee BRC implementation and management, including food safety fundamentals,
HACCP-based food safety plans, food quality plans, verification activities, internal
audits, and external supplier audits as needed.
• Investigate customer complaints, determine appropriate corrective and preventive
actions, and ensure complaint responses and documentation are completed.
• Maintain and verify the pest control program, including monitoring contracted
service reports, open conditions, program effectiveness, and required records.
• Maintain product traceability for ingredients, supplies, raw materials, packaging, and
finished products, including supplier database activities and records to support
recall or recovery events.
• Maintain the written recall program and test its effectiveness through mock recalls.
• Provide and coordinate food safety and quality training for management, employees,
and team members, including HACCP and other applicable food safety training
required by the training program.

• Maintain and verify the Food Defense Program to ensure it remains current and
properly implemented.
• Review FSIS export library requirements and ensure required export procedures and
documentation are followed when product is exported.
• Oversee laboratory functions, scientific testing, environmental programs for raw and
cooked facilities, and corrective or preventive actions based on results.
• Ensure food safety and quality requirements are considered during new product
development and that regulatory compliance is maintained.
• Conduct yield tests, maintain related data, and report results as required.
• Maintain Sanitation Programs and related sanitation support activities assigned to
the Food Safety and Quality Assurance function.
• Develop and update food safety manuals, SOPs, and program documents as needed
for new programs or changes to existing programs.
• Conduct validations of CCPs and intervention systems and implement corrective
actions for food safety deficiencies as needed.
• Maintain food safety files and records, returned goods and hold logs, foreign object
investigation logs, and other required compliance records.
• Other responsibilities or duties will be assigned as needed.
Supervisory Responsibilities
Directly supervises employees in the Food Safety and Quality Assurance Department,
including Quality Assurance Supervisors, QA and HACCP Assistant, Quality Assurance
Technicians, and other assigned personnel. Carries out supervisory responsibilities in
accordance with the organization's policies and applicable laws. Responsibilities include
interviewing and training employees; planning, assigning, and directing work; appraising
performance; rewarding and disciplining employees; addressing complaints and resolving
problems.

Education and/or Experience
Minimum Bachelor of Science degree in Food Science, Biology, Chemistry, Meat Science,
Microbiology, or a related field. OR a minimum of five years of experience in the food
industry with knowledge of the responsibilities listed in this job description.
Language Skills
Ability to read, analyze, and interpret common scientific and technical journals, financial
reports, and legal documents. Ability to respond to common inquiries or complaints from
customers, regulatory agencies, or members of the business community. Ability to write
